Roasted Pineapple

INGREDIENTS

 

1 large pineapple

vanilla caster sugar

 

DIRECTIONS

 

Heat the oven to 180C or there abouts.

 

Prepare pineapple.

 

Slice into wedges and put into the baking tray and sprinkle generously with vanilla sugar.

 

It's done in maybe 15mins when it has taken some colour and the sugar is bubbling nicely and caramelised.

 

Whip some of the vanilla sugar into whipping cream and serve with the pineapple cut into bite sized chunks and garnish with mint leaves. Spoon the syrup from the cooking over the top.

 

I like mine for brekfast with very strong black coffee and a bowl of museli with fromage blanc.
 
Works well with any fruit that can handle the roasting process... apples are always good, as are peaches, apricots, guages and pears
 
For a quicker than quick dessert that tastes like you've been slaving for hours you can serve it a bit more stylishly with mint leaves and vanilla chantilly cream.
Quicker than quick it makes for a delicious dessert anytime...
