Onion (finely chopped) Sweet Pepper (finely chopped) Plum Tomatoes (skinned, deseeded & chopped) Virgin Olive Oil White Wine Vinegar Salt & Pepper Fennel Seeds Absinthe (or Pastis)

Classic French Onion Soupe

Start by gently repeat GENTLY frying lots of finely sliced brown onions in butter with bay leaf & whole black peppercorns for AT LEAST AN HOUR.

If you're short on time... tough! It takes as long as it takes.
