Classic French Onion Soupe
Start by gently repeat GENTLY frying lots of finely sliced brown onions in butter with bay leaf & whole black peppercorns for AT LEAST AN HOUR.
If you're short on time... tough! It takes as long as it takes.
Recipe:

Gently soften and colour the onions in butter

Add beef stock and simmer very gently

Top with a big crouton topped with grated gruyere and finish under a hot grill
